Zucchini Bread |

3 eggs 1 cup oil (or unsweetened applesauce) 2 cups sugar 2-4 cups grated zucchini 3 tsp vanilla 3 cups flour 1 tsp salt 1 tsp baking soda 2 tsp cinnamin 1/4 tsp baking powder |

Beat eggs, oil and sugar. Add zucchini and vanilla. Continue to mix. Blend in remaining dry ingredients. Pour into greased bread pans. Bake at 325* for one hour. Test with cake tester or toothpick.
For cake, pour into greased bundt pan. Bake, cool, remove from pan. Cool to room temperature and top with powdered sugar glaze. |
