    | Oven Omelet Variation...Mexican |

    | 1/4 cup butter or margarine 1 1/2 dozen eggs
 1 cup sour cream or plain yogurt
 1 cup milk
 2 tsp. salt
 chopped onion
 chopped green pepper
 ground beef or breakfast sausage (cooked)
 salsa
 shredded cheese

    | Melt butter in 13x9in pan at 325*. Remove and tilt pan until bottom is coated. In a large bowl, beat eggs, sour cream, milk and salt. Stir in onion, green pepper, and meat. Pour into pan. Bake until eggs are firm but moist.(45-60min.) Remove from oven and top with salsa and cheese. Return to oven and continue baking until cheese melts.(5min.) |  More
